Do you know what kind of tile was used for the back splash?

The vains shouldn't really change direction. They should run uniformly throughout all the pieces in your kitchen. The only solution in your case is to change the location of the seams.

In a L-shape kitchen where the sink and kitchen window are catercorner, is it ok for the veins to change direction? ( from running horizontal to vetical with the seam at the start of the window line. The length of the countertop is longer to the left of the sink. Thanks
