I am doing a full remodel of my kitchen cabinets are American Woodmark Cherry Bourdeaux, possibly Peruvian Mahogany wood floor have not decided on wall cover or backsplash yet and stainlees steel appliances. Could you recommend color for granite countertops?

To be honest, I'd use a light, warm granite color such as Astoria, Sunset Ivory, or Giallo Ornamental for the countertop. Partial to the Sunset Ivory and Astoria because I was a little concerned with the color of the dark cabinets with the mahogany floor (still undecided on the floor and wall colors) since so many designs show a really light floor with cherry cabinets. At least now I have a general idea on which color scheme granite looks good with the cabinets.
You should visit the stone yard and look at the full slabs in-person. Acquire samples that are attractive to you and put them against the cabinets in your kitchen light. This way you truly will get a feel for that colors are appropriate for your set-up. Good luck & let me know how it goes!
Hi, if you have American Woodmark Cherry Bourdeaux then the best possible option you have for the color of granite countertops should be beige or crimson red.

You're correct, although the design options do not end there. But specifically I have Sunset Ivory in-mind for a terrific warm color to create that deep contrast:
