The Azteca would look excellent with your setup, highly recommended.

How would Azteca look with cherry cabinets and a beige porcelain floor. I was thinking of a tumbled Marble backsplash.

Ubatuba, Black Galaxy, and if you want to go with something a little extra fancy try a Bordeaux.

what are you top choices for granite with Oak Cabinets?? thanks

The Portofino is an appropriate choice. I also recommend to take a look at Boreal and Cafe Amazonia. I've created a Comparison Chart for your easy side-by-side reference of my suggestions: Hope this helps!

ok, actually what about Giallo Portofino?  Any ideas of a tighter speckled granite - that is predominately black?

That is a very interesting design idea and I must say that -- it's quite bold and unique. The gorgeous, deeply rich and dark brown Azteca granite would offset the lighter, warmer oak perimeter cabinets for an excellent contrast, while the light and rich with movement but overall neutral White Spring piece would accentuate itself as the centerpiece of the kitchen set-up against a dark black island cabinet for a contrast here as well. Go for it!

What do you think about this granite with oak cabinets for a kitchen perimeter.  White Spring island with black base?
