Miki: As I said, traditionally marble was used for such purposes. Mainly because it was easier to get. Granite is a much denser material though, and should perform even better. |

I've read many responses on other marbles about staining, scratching, etc. You would recommend granite for a cool, smooth surface to roll out thin, flaky pastry? I had just assumed marble would be best. |

Miki: You could. Traditionally, pastry tables were made of marble, but granite is equally good (if not better). |
